I’m not going to finish that with something witty or inspirational because there has never been a sentence that started with “when life gives you lemons” that was actually witty or inspirational.
So.
Today I made these lemon cheesecake cookies from my last post and they are SO GOOD. The Kitchn is one of my fav food sites these days, and I’ve never once made a recipe from there that I didn’t like.
It made sense to make these for a few reasons:
1. Today is the first day of spring, and lemons just haven’t felt appropriate these last few months. Every time I eat fruit in the winter I’m like “Ugh, this shit was grown in a lab and it tastes like trash.” (and, look, I understand the need for GMO foods, but you can’t tell me winter fruit tastes the same as summer fruit ok?)
2. I had all the ingredients but two.
3. Lemons make just about everything taste better. I’ve actually never understood the phrase “when life gives you lemons…’ because in my experience lemons are fucking awesome and taste delicious. That phrase makes it seem like lemons are sour pieces of shit and like you can’t do anything with them. Makes no sense.
My glaze job was not very good. Also, ‘glaze job’ doesn’t sound appropriate. Maybe because of how the glaze looks. Sorry. I am not mature.
Anyway, I was recently laid off from my job, which really sucks. BUT it means I’ll have more time for this blog. Yay positivity. I have so many ideas and I’m trying to make this setback in my life a good thing. My new roommate was telling me that she’d been laid off before, and she had a “beautiful unemployment.” I would have never paired the word “beautiful” with “unemployment” but damn if I’m not going to try now! Cheers.
