Yesterday, my lovely friend Margaret came over and we had big plans to go to Sephora and make some cilantro lime chicken for dinner. We did the Sephora thing and tried on approximately 137 lipsticks (this is normal). Then, we went to the grocery store and much to our chagrin, it did not have cilantro in stock. So, we went to another store, which also did not have cilantro. Is there some sort of cilantro shortage no one told me about? If so, who are the proper authorities I can call about this horrible injustice? Apologies to those who are genetically predisposed to hate cilantro.
Anyways, we changed up our plan and Margaret found this Tuscan chicken pasta to make which I already had a ton of ingredients for. This pasta has chicken, tomatoes, bacon, garlic, parmigiano reggiano, heavy cream, and what looks like 5 leaves of spinach after wilting so you know, it’s very healthy. I should let you know that in the process of making the chicken we set off the smoke alarm and nearly gave my roommate a heart attack as she saw smoke rising through her vents upstairs. Lesson learned: don’t cook chicken in a stainless steel pan. (I feel like that’s not right and I just didn’t use enough oil or something, but whatever). My neighbors can thank me for making the neighborhood smell like a damn backyard BBQ as I ran outside with the smoking pan. YA WELCOME.
Panic aside, the pasta turned out to be delicious. 10/10 would make again.
