Hey guys remember me?

I’ve been following the beautiful, hilarious, gives-ZERO-fucks Chrissy Teigen for a couple years now and along with much of the internet, I’m pretty obsessed with her. She is funny as hell, has VERY cute dogs, and, like me, loves to cook. So you can imagine my excitement when she announced she was releasing a cookbook.

To my shame, hers is the first cookbook I’ve ever actually purchased. THEY’RE EXPENSIVE. I have so many on my Amazon wishlist but let’s be real, I’d rather spend my money on actual food. Probably should cut back on that tho.

Anyways, I’ve made a few things from it so far and everything has been so good. It’s just the best cookbook. I mean, she has a chapter called “Sh*t on Toast” and it makes me feel like we are the same person. Last night I made her Roasted Cauliflower, Feta & Orzo salad for the second time and it’s just a real treat. And probably not even the best thing in there, but I’ve made it twice which rarely happens so you know it’s good.

So there’s a lot going on in this salad. We got roasted cauliflower (which, by the way, is nearly impossible not to eat right out of the oven), orzo pasta, raw red onion, feta, dried cranberries (she uses cherries, but I don’t mess with cherries so we going with Crasins), & spinach, tossed in a lemon honey dijon dressing. I also added some glazed walnuts in there because why the hell not. It’s an odd combination of ingredients and flavors but it just works. Last night with dinner, I paired the salad with some lemon thyme chicken thighs and it was just a real nice meal. For lunch today, I just added some extra spinach and made it look like an actually healthy salad. I mean I guess it is healthy, there’s not a ridiculous amount of pasta in there. So it has that going for it too, which is nice.

Can’t wait to try more of her recipes. There’s pretty much nothing in her book I wouldn’t try. Definitely been eyeing up her prosciutto-wrapped stuffed chicken breasts. Will report back when I try them! I’ll also try not to wait a month between blog posts too. Sorry bout that. Got a little busy/lazy there. Mostly lazy.
