Another Girl Crush: Giada De Laurentiis

Ok so. Chrissy Teigen is still my number 1 girl, but we need to talk about Giada for a sec, who is a beautiful Italian angel. I was really feeling for her last year when she got divorced. Why would anyone divorce Giada?! I know there are two sides to every story, but she is lovely. On a personal note, I would also like to know her diet and exercise and skincare plan.

Today I made her spinach + sundried tomato stuffed pork chops and man oh man. I already knew they would be good from the ingredients but I was definitely worried I would fuck these up. I’ll tell you straight up I made a couple small mistakes, but overall the dish was bomb.

I actually made this last night, but saved one of the stuffed pork chops to cook today. For the good lighting, you know. Last night’s experiment was more successful than today because I threw out the rest of my chicken broth (because I’m wasteful and I forgot I needed to use it again today) so I couldn’t make the sauce to finish it with. Luckily it’s still very good without the sauce! I also overcooked the F out of my potatoes last night, which are not apart of this recipe and were just potatoes I needed to use up. Today I made them perfectly!

Who doesn’t love a rainbow potato medley? I mean really. I freestyled these with some olive oil, S+P, thyme, and smoked paprika.

The stuffing in the pork has spinach, sundried tomatoes, goat cheese, cream cheese, thyme, and some S+P. I could probably eat it alone with a spoon or my hands because it’s just that good and I’m a monster.

My last mistake, which I didn’t know was a mistake at the time, was getting super thick cuts of pork. It made sense to me since I was stuffing them, but they took too long to cook and ran the risk of burning on the pan (and setting off the smoke alarm, again), so I finished them in the oven. Not a huge deal, but would have been more efficient to use a slightly thinner cut!

I’d definitely make these again – or the stuffing at the very least. It would be really good in chicken too! Or, like, baked in a ramekin with cheese and panko bread crumbs for very unhealthy consumption.
