SOS. It has been raining for 18 of the past 22 days.
I forget what the sun looks like.
I feel like I may light on fire when the sun actually appears and touches my skin.
In an attempt to make it feel more like spring, I went to the farmers market this morning (in the rain, in a coat) to buy blueberries to bake some lemon blueberry muffins. Apparently, blueberries are not yet in season. 🙃
I did get some really delish strawberries, though, and then I walked over to the grocery store and bought some god damn blueberries because I was determined to make these muffins happen.
Here are said strawberries.
I came home and made these lemon blueberry muffins because they had the highest rating of the first, like, 6 muffin recipes on google. I have a bone to pick with this blog, and a lot of food blogs that are primarily used to share recipes and techniques (read my intro post – mine doesn’t fall under this category before y’all call me a hypocrite). There are like, 10 research papers worth of text on this recipe before it even lists a damn ingredient. No shade but I don’t care about your kids or how to teach kids how to cook. I mean, maybe some people do, but not everyone. List the recipe in the beginning and spout the rest of your nonsense at the end. So many bloggers do this and I just scroll right to the end. GIRL BYE.
To this blogger’s credit though, this recipe was realllllyyyy good. The only thing I changed was I added some lemon extract to the batter, in addition to zest, because lemons are life.
This is the first blueberry muffin recipe I’ve ever successfully made. I’m not sure if I’ve just become a more skilled baker or if it’s the recipe but these really do taste like some Starbucks type-ish. How sad is it that my pedestal for blueberry muffins is Starbucks? Yikes, I need to get out more. Their blueberry yogurt muffins are excellent though, ok? I actually don’t even really like blueberries that much, but when you put those babies in a muffin or cake, all bets are off.
My roommate tried one and told me I should sell them, so that was a nice compliment. I need my roommates to take all of these to their respective work places so I don’t eat all of them while I’m working from home. Maybe gauge some interest for potential buyers. This is how small businesses start, right?
I think people would eat them, for sure.
